I tinkered wif teh recipe fur yeers, and I gots dem juss rite IMHO.
They hab a thin (nawt wafer thin) crust, and double the lemon filling on top, so they are nice and thick. Be careful – they hab a gud lemon flavor, fur teh serius lemon lubbers. I pipe a liddle squiggle ov white frosting juss to maek dem luk prettee.

Sorry, I can’t find my recipe, but I tried to put a link to a recipe I found but it won’t post.
You could try what I did – use a well known search engine to look for Lemon sponge pudding cake
Lemon Sponge
2/3 cup granulated sugar
2 tbls soft butter, room temperature
2 tsp grated lemon zest
3 large eggs, (separated)
3 tbls all-purpose flour
1/2 cup lemon juice (fresh is best)
1 cup heavy cream
pinch of salt
1/8 tsp cream of tartar
Cream together the sugar, butter and lemon zest in a large bowl. Beat in the egg yolks. Gradually stir in flour, alternating with the lemon juice and cream until well blended.
In a medium, beat egg whites until foamy. Add salt and cream of tartar and beat until soft peaks are formed (looks like the swirl on a custard ice cream)
Fold beaten egg whites into the first mixture, until barely incorporated evenly. Be gentle! Pour into a 1 1/2-quart casserole or souffle dish. Set the dish in a bain marie (or a larger pan) with about 1 inch deep of hot water. Bake at 350° until top is set, about 35 to 45 minutes. Serve pudding hot or cold (yeah, like it will last that long)
Lemon sponge serves 4 to 6 … or 1 very happy Smammie
