So every foist weenend in May, Esther and I have a little Kentucky derby party, sumtimes just the two of us. I mixes up Juleps using the recipe that my uncle obtained from Pappa Hemingway hisself (a story for anudder time). Then we picks our win place and show choices and makes our little bets wid each other and watch the race. After dat is dinner sumtimes a burgoo stew or a smoked brisket or a BBQ or fried chicken and then to top it off PIE! Lemon or rhubarb (it usually isn’t quite ready to pick by Derby day) or a Chess pie or Lousiville Bourbon Pie.
Life is good.
Louisville Bourbon Pie? I can has resippee?
Use the bourbon of yer choice - I likes Makers Mark but Beam (same manufacturer I tink) is also very gud. This is an open (one) crust pie.
Pie Shell
1 1/3 cups (7oz) flour
1/2 tsp salt
1/3 cup veg oil
3 Tbs cold milk
preheat oven to 350. Combine flour and salt. Combine oil and milk. Add liquid to dry ingredients & toss to moisten. Press into pie pan. Blind bake for 5 minutes.
Filling
2 cups sugar
3/4 cups butter
4 eggs
1 Tbs flour
1/3 cup cream
3 Tbs boubon
More bourbon in glass for cook (as needed)
Cream butter and sugar. Beat in eggs,flour,cream, then bourbon.
Pour into partially bake pie shell. Bake at 350 for 50 mins- 1 hr, or until set
let cool at least 30 minutes.

Hotel Hershey Derby Pie
9” unbaked pie shell
1 c. sugar
2 T. cornstarch
3 eggs, beaten
¼ c. butter, melted
1/3 c. milk
2 T. bourbon or 1 t. vanilla extract (I use Jack Daniels)
1 6-oz. package chocolate chips
1 c. pecans, coarsely chopped
Heat oven to 425o. Prepare pie shell. Combine sugar and cornstarch in a bowl; beat in the eggs. Add butter, milk, bourbon or vanilla, chips, and pecans. Pour into pie shell. Bake for 10 minutes at 425 o, then reduce oven temperature to 350o and continue baking for another 35 minutes, or until pie is puffed up and lightly browned. Cool. Serve warm with ice cream or whipped cream.

Prepare 9″ unbaked pie crust. Heat oven to 450 degrees F. Beat egg whites until stiff; turn into a large mixing bowl and set aside. Cream butter, sugar, and flour. Stir in beaten egg yolks. Add lemon juice and rind. Slowly beat in milk. Fold egg whites into lemon mixture (I use a wire whisk.) Turn into pie shell. Bake at 450o for 10 minutes; reduce heat to 350o and continue baking for 30 more minutes, or until top is lightly browned and pie is set.
For a 10″ pie, double the recipe.

I finally bought a good digital kitchen scale wiff both grams and ounces. It has helps a lot. I now measure out 5 oz of flour instead of 1 cup because 5 oz is alway the same regardless of the weather. Werx gud.
