Devilled kidneys - I use a cheats version of Escoffier’s recipe, but basically kidneys braised in a chilli gravy.
Potato scones - Scones made with potato, and about as thin as crepes. There’s probably a recipe out there if you Google something like potato scones and Scottish (or Irish) recipes.
Black pudding - Scottish or Lancashire (England) take on a blotwurst. Enough said?

Hmm, ai has to disagree - teh haggis is nawt so bluddy. Seems to be moar barley an stuffs init an genrly less scaree. Ai likes teh haggis bery mush, but ai cannawt bring maiself to go neer teh blak pudding. (ai no dat teh list of ingreediments of bofe of dem looks laik an exploshun inna abba twah but somehow teh haggis ends up lookin nicer at teh end).

On the general point about what black pudding looks, textures and tastes like, it varies, other than always being black, even raw! Like any other butcher-made sausage, there are always different tweaks in proportions of main ingredients and seasonings.
