It’s teh spices yoo use that luk so tastee. Ai havn’t ebber used FRESH coriander. Tho ai doo hav a liddle mortar an pestle taht ai got in Turkey to grind it up wif.

ok – eyem problih ginna braik in 2 hinglis 4 dis
as udderwyz cud be awl nyte riitinz.
required:
steamer for the brox
small pan for the roux
wok or similar for saute of the veggie topping
buttered dish to bake everything in the oven.
spices – and here there’s a dose of ad lib:
fresh ground corriander ( as it’s mind blowingly yummy to bend obver the pestle when you’ve just ground it!! Hmmmmm. )
salt to taste and pepper the same.
a little chilli powder ( but cayenne or paprika will do )
so
I begin by steaming the brox, with herbs like oregano and maybe some fennel seeds if you think they don’t fight too much. Often I put the fennel seeds in the water of the steamer and sprinkle the oregano over the brox. till it’s just starting to be tender but not mushy!!
meanwhile…
chop all the other ingredients pretty finely – the leaks, onions, garlic can be crushed, the carrots nituke ( that’s what I call it anyway – when you chop them into matchsticks )
a little oil in the wok – fry the spices lightly with the garlic. just before the garlic goes brown add the rest and saute.
meanwhile….
setting the oven to 180 approx warm the dish and butter it – add the steamed broccoli, a layer of your favourite cheese grated ( I like a medium to mild cheddar ) then the sauted veggies then another layer of cheese.
At the same time as you’re doing all this, prepare the roux by melting butter in the small pan and adding the flour and mixing it in till it just starts to ‘fry’.
the amounts depend on how many you’re serving. But I use an ounce of butter to an ounce of flour
and a small or just half teaspoon of a salt and pepper mix ( 3/1salt to pepper – that being course ground black pepper )
gradually add milk so as not to make a lumpy roux ( that’s the most difficult part of the whole job!! ) and a pinch of nutmeg – and if it appeals to your tastes, a 1/4 teaspoon of tumeric ( haldi ) the amount of milk would be half a pint for this mix. bring to boil etc and taking off the heat add lots more cheese at least 3 oz
pour this roux mix over the contents of the dish and bake in the over 4 20-30 minutes. you can sprinkle breadcrumbs and extra cheese on top to make it extra yummy.
and that’s about it.
