I’ve been watchin’ what they’ve been doin’ there, and I think there is a core family group, and then there’s friends and neighbors who pop in occasionally. I can read lolcat, but the long posts sometimes get too tedious. Typing lolcat is ok for short doses. You are not the only newbie, but if you ask nicely, the core family may adopt you. Then you can have a “forever home.” If you go back through the other pictures in other months, you will learn many interesting things; some pleasing, some useless, but still, things you didn’t know before.

required:
steamer for the brox
small pan for the roux
wok or similar for saute of the veggie topping
buttered dish to bake everything in the oven.
spices – and here there’s a dose of ad lib:
fresh ground corriander ( as it’s mind blowingly yummy to bend obver the pestle when you’ve just ground it!! Hmmmmm.
salt to taste and pepper the same.
a little chilli powder ( but cayenne or paprika will do )
so
I begin by steaming the brox, with herbs like oregano and maybe some fennel seeds if you think they don’t fight too much. Often I put the fennel seeds in the water of the steamer and sprinkle the oregano over the brox. till it’s just starting to be tender but not mushy!!
meanwhile…
chop all the other ingredients pretty finely – the leaks, onions, garlic can be crushed, the carrots nituke ( that’s what I call it anyway – when you chop them into matchsticks )
a little oil in the wok – fry the spices lightly with the garlic. just before the garlic goes brown add the rest and saute.
meanwhile….
setting the oven to 180 approx warm the dish and butter it – add the steamed broccoli, a layer of your favourite cheese grated ( I like a medium to mild cheddar ) then the sauted veggies then another layer of cheese.
At the same time as you’re doing all this, prepare the roux by melting butter in the small pan and adding the flour and mixing it in till it just starts to ‘fry’.
the amounts depend on how many you’re serving. But I use an ounce of butter to an ounce of flour
and a small or just half teaspoon of a salt and pepper mix ( 3/1salt to pepper – that being course ground black pepper )
gradually add milk so as not to make a lumpy roux ( that’s the most difficult part of the whole job!! ) and a pinch of nutmeg – and if it appeals to your tastes, a 1/4 teaspoon of tumeric ( haldi ) the amount of milk would be half a pint for this mix. bring to boil etc and taking off the heat add lots more cheese at least 3 oz
pour this roux mix over the contents of the dish and bake in the over 4 20-30 minutes. you can sprinkle breadcrumbs and extra cheese on top to make it extra yummy.
and that’s about it.

I be most flattered by your flattery. But you so nice, and dis be the night of wonders in da sky, I tell you a story of another eklipse, and of the most incredible moment of my life….
Ten years ago (this month, akshually!) my huzband and I took a Carribbeeaan cruze to see the total eklipse of da sun. We be in the area of the island of Montserrat which had experienced a serious volcanic eruptshun a year or two before. So everybody be on deck as the eclipse is about to begin, and lo and beholden, there be the volcano erupting on the island! It not be the fiery erupshun of lava, but a very tall, thick column of heavy smoke and ash. I could be seein the path of the pyroclastic flow from da previous eruption. Anyway, the eklipse began, and as I be filming da byootiful event in the sky. I kept turning my camcorder from eklipse to volkano to eklipse…I be in heaven! The eklipse was beeyutiful: with Jupiter and Mars (I THINK that were the two – have to look in my diary) hung close and bright in the now darkened sky in the 10 and 6 positions, and da minutes of totality were preceeded and followed by a very lovely flair of da “diamond ring.” To witness such a magic moment in the eternal Dance of the Heavens wuz wonderful enuff, but to also be witnessing a volcanic erupshun – and at the sayme tyme! – I felt so connekted to time and space and God and Earth and da universe…..(almost like I do when I holds my little kitteh Cookie). AND – both film and tape turned out great, Thank God!
