Yoo remind mee ov mai deer frend Sumi, hoo is also frum India. She grew up in Calcutta but her mother is frum Guurvayoor in Kerala, which is where her parents live now. And she, herself, married a German and is now working at the University of Stuttgrart.

1lb fresh mascarpone, 3 eggs, 3 heaped tbsp sugar, a pack of Goya ladyfingers (get 2 packs, to ensure you don’t run out), a shot of cognac (rum works well, too), 1 cup strong black coffee (espresso is great), cocoa powder. Beat cheese and eggs together in a big bowl, with a wooden spoon. Blend in sugar and about 3/4 of cognac. Mix remaining cognac into coffee, pour in flat dish. Roll ladyfingers one by one in coffee (take care not to get them soggy) and arrange in a layer in 9X13 pan. Using a spatula, spread half of cheese mixture gently and evenly over the ladyfingers, taking care not to crumble them. Make another layer of ladyfingers, and another layer of cheese mixture. Sprinkle cocoa powder on top.

The most important thing is that the mascarpone must be fresh — soft and thick. I used to get mine from Wegman’s, where they got or made it fresh everyday. When they were out of it, I would buy 2 half-pound boxes of Bel Gioioso brand mascarpone (NOT premixed, just plain).
